Insalata - Salad

Con questa ricetta fresca e veloce, piacevole anche in inverno, partecipo alla raccolta “Salads” di Susina strega del tè.
INSALATA DI FINOCCHIO - ARANCE - TONNO
Ingredienti per 2 persone:
1 finocchio grande,
2 arance,
1 scatola di tonno al naturale da gr.160
1 manciata di olive taggiasche
1 manciata di pistacchi pestati
3 cucchiaio di olio evo
1 cucchiaio scarso di aceto balsamico
1 pizzico di origano
1 pizzico di sale
qualche fetta di pan carré tostato


Lavate e mondate il finocchio e affettatelo sottilmente, pelate a vivo le arance e tagliatele a spicchi. Ponete gli ingredienti in una ciotola unendo il tonno sgocciolato, le olive e i pistacchi triturati. Condite con un'emulsione preparata con l'aceto balsamico, l'olio extravergine di oliva, una presa di sale e l’origano; mescolate con cura e servite con l’aggiunta di triangoli di pan carrè tostato.

FENNEL - ORANGES - TUNA SALAD
Ingredients for 2 people:
1 large fennel bulb,
2 oranges,
1 tin of tuna in brine about oz.5 – 5 1/2,
1 handful of "ligurian taggiasche" olives,
1 handful of crushed pistachios,
3 tablespoon evo oil,
1 tablespoon balsamic vinegar,
1 pinch of dried oregano,
1 pinch of salt,
some pieces of toasted tin loaf bread

Remove the tougher outer leaves of the fennel buld, trim and thinly slice it, cutaway peel from oranges so no white part remains and slice them. Put fennel and orange slices in a bowl by combining the drained tuna, olives and crushed pistachios. Dress with an emulsion prepared with balsamic vinegar, extra virgin olive oil, a pinch of salt and of dried oregano, mixed with care and serve with the addition of triangles of toasted tin loaf bread.

love the tuna salad and the pancakes ummmmm.. the little socks are so sweet, the books look fun I used to love buying childrens books when my girls were small.

Hi Eli...oh that salad looks wonderful...I have never made fennel before. I will have to try this. I do love anise and I know the taste is similiar..
